As plant-based foods gain popularity, scientists are exploring new ways to make them even better. One recent study focused on fermented lentils and quinoa flour, which could offer older adults a protein boost. The researchers wanted to see how these foods affect the gut bacteria of older adults. They used a special lab model to mimic what happens in the colon. After adding gut bacteria from four seniors, they checked the bacteria's makeup and the short-chain fatty acids (good stuff for your gut) produced.
Surprisingly, the type of food mattered more than whether it was fermented or not. Gels made from the flours showed the best changes in gut bacteria, while breads were better for boosting the good fatty acids. However, fermentation didn't make a big difference in most cases. Still, these new food ideas could be a healthy addition to our diets.
