Frozen Pig, Crisp Results: The Best Way to Store and Reheat Roasted Suckling Pig

Storing and reheating roasted suckling pig isn't as simple as tossing it in the fridge. A recent study looked at how different methods affect the taste, texture, and smell of this traditional dish.

The researchers tested several packaging and storage combos. They found that vacuum-sealed aluminum foil, when frozen at -20°C, kept the meat in great shape. The muscle fibers stayed intact, and the meat held onto its moisture. That means less drying out later.

When it came time to reheat, charcoal was the winner. Reheating the frozen pig over charcoal brought back that signature crispy skin. It also kept most of the tasty smell molecules, like alcohols and aromatic hydrocarbons. People who tasted it said it was almost as good as the fresh version.

But not all methods worked well. Storing the pig in the fridge at 4°C and then zapping it in the microwave caused problems. The fat started to oxidize faster, and the meat lost a lot of moisture. The skin turned soft, and the flavor wasn't as strong.

So what's the takeaway? If you want to keep roasted suckling pig tasting fresh, freeze it in a vacuum-sealed foil pack and reheat it over charcoal. It's the best combo for keeping it crispy and full of flavor.
