If the way you eat could be tailored just for you. That's the goal of a massive nutrition study going on right now. Scientists are trying to figure out how different people respond to the same food, based on their genes, culture, and environment. They've got volunteers like Sheryn Stover, who's eating every crumb of her pizza for the cause. She's one of over 10, 000 people helping out with the Nutrition for Precision Health Study.
Stover, or participant #8180 as she's known in the study, is part of a $170 million project run by the National Institutes of Health. She's excited to be part of something that could help so many people. The study aims to move away from one-size-fits-all dietary advice. After all, what works for one person might not work for another.
The USDA kitchen where this study happens is no ordinary kitchen. Nutritionists here measure every ingredient down to the tenth of a gram. They're looking at how different people react to food, and they're even studying the microbes in participants' poop to learn more. It might sound a bit strange, but it's all in the name of science.
Stover is one of 150 people who get paid to live at test sites around the country for six weeks. She can't even go for a walk without a dietary chaperone. Everything she eats and does is tracked. Other volunteers participate from home, using special glasses to record their meals.
The study will likely be finished by 2027. The hope is that we'll know exactly what foods are best for each of us. But will we listen? That's the big question.
