You might be surprised to learn that a group of scientists advising on the federal government's dietary guidelines didn't take a strong stance against ultraprocessed foods. They thought the science wasn't solid enough. They're right to be cautious. The category of ultraprocessed foods is huge, covering about 60% of the American diet. It includes both healthy options like whole-grain bread and hummus, and not-so-healthy choices like cookies, potato chips, and soda. While many ultraprocessed foods are bad for health, others aren't.
It's important to remember that not all ultraprocessed foods are created equal. Some are fortified with vitamins and minerals, making them a good source of nutrients for people who might not get enough otherwise. But it's also true that many ultraprocessed foods are packed with sugar, salt, and unhealthy fats.
So, is ultraprocessing really the best way to think about nutrition? It's not that simple. We need to look at the big picture and consider each food individually. Foods should be judged by their specific ingredients and nutritional value, not just the process they went through.
