In the heart of Japan, a quiet revolution is happening. More women are entering the world of sake brewing, once considered off-limits. Meet Mie Takahashi, a master brewer at Koten brewery in Nagano. She's one of just 33 female toji (master brewers) in Japan. Traditionally, sake making was a man's job, tracing back over a thousand years and deeply rooted in Shinto tradition. But times are changing. Mie believes passion matters more than gender.
Machines now handle much of the heavy lifting, making brewing more accessible. She loves the craft, especially the bubbly action of microorganisms turning rice and water into delicious sake.
